The scientific background<\/h2>\n\n\n\n

Fondazione Barilla collaborated with Dr. Claudia Giordano and the University of Bologna to conduct a study based on an in-depth analysis of national and international scientific literature, in order to develop and compile The Savings Book.
Every tip and piece of advice in the book is supported by a solid scientific foundation.<\/p>\n\n\n\n

Food waste refers to the amount of food that is not consumed at the household, catering, and retail levels. Globally, household waste represents the largest share of total food waste (60%), followed by the catering sector (28%) and retail (12%).\u00b3 These figures are reflected at the European level as well, where 54% of food waste occurs in households.\u2074 Each year, the European Union generates over 59 million tonnes of food waste, equivalent to 132 kg per person,\u2075 with an estimated market value of \u20ac132 billion.\u2076 At the same time, more than 42 million people cannot afford a quality meal every other day (Eurostat, 2023).<\/p>\n\n\n\n

A study coordinated by the University of Bologna, currently under scientific review and conducted in collaboration with Fondazione Barilla, estimated that the value of food waste exceeds \u20ac500 per year per household. This means that by reducing waste, a family can save up to \u20ac500 annually. The study uses the same methodology as Giordano et al. (2019) to estimate the extent of food waste among the Italian population through food diaries and served as the basis for the \u201cChi non spreca ci guadagna\u201d campaign.<\/p>\n\n\n\n

Preventing and reducing food waste is within everyone\u2019s reach. That\u2019s why we have compiled a user-friendly book featuring 120 anti-waste actions to enrich our daily lives.<\/p>\n\n\n\n

In preparing the book, we started with a thorough and detailed analysis of national and international scientific literature to identify the foods most commonly wasted\u2014such as fruit, vegetables, bread, and fresh dairy products\u2014and the main reasons behind this waste, including improper storage and misreading expiration dates.\n\nAfter completing the literature review, we identified and organized potential anti-waste actions into five main categories: how to best store different types of food, including guidance on correctly reading expiration dates; how to cook using parts of food that are usually discarded; and how to reuse leftovers. The last two sections focus on meal planning and eating outside the home, particularly when shopping or having meals at the office or in restaurants.\n\nAll tips and recommendations in the book are grounded in solid scientific evidence, translating a mindful approach to saving and reducing waste into everyday life.<\/p>\n\n\n\n

Reducing food waste is a great opportunity to improve the quality of our lives: it allows us not only to value food and protect our planet but also to foster a genuine culture of saving.<\/p>\n\n\n\n
